Holiday Porter

The holidays are fast approaching...

And when it comes to beer - being ahead of the game is key. You have to be brewing a few holidays ahead and that's exactly what we decided to do. We've never done a Holiday Porter yet and we decided that it was time we give something a try that had some holiday charm, with that nice warm pick-me-up that holiday brews tend to have.

We took it upon ourselves to consider some spices that we felt would be a great example of that 'holiday spirit' and decided that we would use a healthy dose of Cinnamon, Allspice and Ginger to give our Holiday Porter those added spice notes. But how much is 'too much'? After some research and reading we decided that we would go with a bit more spice than most tended to recommend, but not as much as those beers that tend to be really heavy in the spice department. We're hoping this will turn out to be a really balanced brew and have a nice mix of spice, malts and some pretty mellow hop notes.

NotesA friend of ours stopped by and assisted us in brewing this beer. Max was kind enough to help out and was ready to learn the process; it was his first time ever brewing!

The recipe breakdown went something like this...

Malt Bill

  • 10 lb Pale Malt (Maris Otter)
  • .75 lb Chocolate Malt
  • .50 lb Caramel/Crystal Malt - 80L
  • .50 lb Flaked Oats
  • .25 lb Flaked Barley
  • .25 lb Black Patent Malt

Hops

  • 2 oz. Williamette (4.80%) - 60 minutes
  • 1 oz. Williamette (4.80%) - 5 minutes

Spices

  • 3 tsp Cinnamon - 5 minutes
  • 2 tsp Ginger - 5 minutes
  • 2 tsp Allspice - 5 minutes

Yeast

  • 1 Pkg. Burton Ale (White Labs #WLP023)

The mash temp was 154 degrees for 65 minutes. It has been in the fermenter for one week at this point and was very active the first few days but has tapered off quite nicely. We are really excited to see how this one is going to taste - more measurements and other things to come later!
